Roasted Red, White & Blue Gourmet Potato Salad

Ingredients

  • 24 oz. Tasteful Selections® 2-Bite potatoes
  • 2 cloves garlic, minced
  • 2 tsp. olive oil
  • Salt and pepper, to taste

Dressing Ingredients:

  • 1 tsp. fresh lemon juice
  • 1 tsp. Dijon mustard
  • c. Mayonnaise
  • Salt and pepper, to taste

Garnishes:

  • 4 slices bacon, cooked and crumbled
  • 3 Chopped green onions
  • 2 tsp. fresh parsley, finely chopped

Instructions

  • Preheat oven to 400-degrees. Cut potatoes in half. In a large bowl, combine potatoes, garlic, olive oil, salt and pepper. Gently stir to coat. Pour onto baking sheet and roast for 25-30 minutes, turning over after 15 minutes.
  • When potatoes are cooked to desired tenderness, remove from oven and allow to slightly cool. While potatoes are still warm (not hot), add the dressing, cooked bacon, green onions and parsley; carefully stir to combine.Serve warm or at room temperature.

Recipe Tips

If you have an Air Fryer, you can speed up the roasting time by cooking them in the Air Fryer at 400-degrees for 12-15 minutes, shaking halfway through.
