Ingredients

  • 24 oz. Tasteful Selections® fingerling potatoes
  • ¼ c. olive oil
  • 1 tsp. cumin
  • 1 tbsp. chili powder
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 medium avocado, peeled, seeded & diced
  • 1 c. crumbled cotija cheese
  • 1 small yellow onion, diced
  • 1 c. fresh cilantro, finely chopped

Instructions

  • Wash potatoes and cut in either halves or quarters lengthwise. Preheat oven to 425-degrees.
  • Toss Party Potatoes with olive oil, cumin, chili powder, salt and pepper. Arrange Party Potatoes on a baking sheet and roast in oven for 25 minutes.
  • Arrange potatoes on a platter and top with avocado, cotija cheese, diced onions and chopped cilantro. Serve with lime wedges.
