Balsamic and Herb Fingerling Potatoes

For a dish packed with flavor, these Balsamic and Herb Fingerling Potatoes are great to take to any BBQ. They’re colorful and tantalizing!
Prep Time: 20 min | Cook Time: 20 min | Serves: 4
- 32 oz. Tasteful Selections® potatoes, halved (Recipe favorite: Sunset Fingerling)
- 3 tbsp. whole grain mustard
- 1 tsp. honey
- 1 tsp. lemon juice
- 2 tbsp. balsamic vinegar
- 2 tbsp. parsley, chopped
- 1 tsp. thyme, chopped
- ½ tsp. salt
- 1/8 tsp. black pepper
- ¼ c. olive oil
In a large pot, cover potatoes with water. Bring water to a boil and add salt to the water. Reduce to a simmer and cook until potatoes are fork tender, about 15-20 minutes. Drain potatoes and set aside.
In a large bowl, whisk together remaining ingredients. Add warm potatoes to the sauce and stir to combine. Serve warm or cool and refrigerated leftovers.
