Cheesy Breakfast Potato Casserole

  • 16 oz. Tasteful Selections® potatoes, quartered (Recipe favorite: Honey Gold)
  • 5 eggs, beaten
  • 8 oz. light cheddar cheese, shredded from block
  • ½ c. milk
  • ½ tsp. onion powder
  • 1 tsp. salt
  • ½ tsp. dry mustard
  • 8 oz. low-sodium deli ham, chopped


Preheat oven to 350-degrees. In a large bowl, whisk together: eggs, milk and seasonings. Stir in cheese, ham and potatoes. Pour mixture into an 11×7” baking dish sprayed with olive oil spray. Bake for 45-50 minutes. Allow casserole to sit for 10 minutes to “set” before serving. Serve warm.
