Lemon Roasted Sensation Potatoes  

Prep Time: 10 min | Cook Time: 25 min | Serves: 4-6

Ingredients:

  • 24 oz. Tasteful Selections® potatoes (Recipe favorite: Ruby Sensation)
  • ¼ c. olive oil
  • 2 tbsp. lemon juice
  • 1 tbsp. fresh oregano, minced (or 1 tsp. dried oregano)
  • 2 tsp. lemon zest
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 6 bay leaves

Directions:

Preheat oven to 400-degrees.

Place potatoes on rimmed baking sheet in single layer.

In a small bowl, combine olive oil, lemon juice, oregano, lemon zest, salt and pepper. Pour over potatoes and toss to combine. Place bay leaves among the potatoes. Roast potatoes 20-25 minutes, or until tender. Serve hot.
