Lemon Roasted Sensation Potatoes

- 24 oz. Tasteful Selections® potatoes (Recipe favorite: Ruby Sensation)
- ¼ c. olive oil
- 2 tbsp. lemon juice
- 1 tbsp. fresh oregano, minced (or 1 tsp. dried oregano)
- 2 tsp. lemon zest
- ½ tsp. salt
- ¼ tsp. pepper
- 6 bay leaves
Preheat oven to 400-degrees.
Place potatoes on rimmed baking sheet in single layer.
In a small bowl, combine olive oil, lemon juice, oregano, lemon zest, salt and pepper. Pour over potatoes and toss to combine. Place bay leaves among the potatoes. Roast potatoes 20-25 minutes, or until tender. Serve hot.
