Passion and Bleu Potatoes  

Prep Time: 5 min | Cook Time: 15 min | Serves: 4-6

Ingredients:

  • 24 oz. Tasteful Selections® potatoes (Recipe favorite: Purple Passion)
  • 1 tsp. salt
  • 2 tbsp. butter
  • 1/3 c. bleu cheese crumbles
  • 2 tbsp. bacon bits
  • 1 tbsp. finely chopped fresh chives (or 1 ½ tsp. dried chives), optional
  • Salt and pepper, to taste

Directions:

Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook on medium-high heat. Cover and bring to a boil. Reduce heat to medium-low and simmer 10-15 minutes, or until desired tenderness.

When potatoes are done cooking, drain and add butter, bleu cheese, bacon bits and chives. Stir to combine. Season with salt and pepper, to taste. Serve hot.
