Roasted Garlic Fingerlings

- 24 oz. Tasteful Selections® potatoes (Recipe favorite: Red Fingerling)
- 8 cloves garlic, whole
- 3 tbsp. olive oil
- Leaves from 5 thyme sprigs (or 1 tsp. dried thyme)
- Salt and pepper, to taste
Preheat oven to 375-degrees.
In a large bowl combine all the ingredients and toss. Transfer to a baking sheet and roast for 15-20 minutes, or until tender.
