Roasted Garlic Fingerlings  

Prep Time: 5 min | Cook Time: 20 min | Serves: 8

Ingredients:

  • 24 oz. Tasteful Selections® potatoes (Recipe favorite: Red Fingerling)
  • 8 cloves garlic, whole
  • 3 tbsp. olive oil
  • Leaves from 5 thyme sprigs (or 1 tsp. dried thyme)
  • Salt and pepper, to taste

Directions:

Preheat oven to 375-degrees.

In a large bowl combine all the ingredients and toss. Transfer to a baking sheet and roast for 15-20 minutes, or until tender.
