Smashed Potato Basil Salad

Prep Time: 5 min PLUS 2 hours marinating | Cook Time: 10 min | Serves: 4-6
- 24 oz. Tasteful Selections® potatoes (Recipe favorite: Sunrise Medley)
- ½ c. sugar
- ½ c. cider vinegar
- ½ c. red wine vinegar
- ½ c. warm water
- ¼ c. (or more) chopped, fresh basil
- 3 tbsp. butter
Place potatoes in a medium saucepan, cover with water and boil potatoes until fork tender. When potatoes are done, drain the potatoes and toss them with the vinegar marinade. Cover with tin foil and set aside for 2 hours.
While potatoes are cooking, mix sugar, vinegars and warm water (warm helps dissolve the sugar) in a large bowl.
After marinating for 2 hours, drain off marinade. Smash potatoes, then add basil and butter (and a dash of sea salt if you’d like!) and stir with a fork, breaking up large bits of potato with fork.
Serve “warmish”, and make your mouth happy!
