Crispy Skillet Breakfast Potatoes with Sautéed Veggies

Ingredients

  • 1 tbsp. olive oil
  • 1 tbsp. unsalted butter
  • 24 oz. Tasteful Selections® potatoes, halved
  • 1 small onion, finely chopped
  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 2 cloves garlic, minced
  • ½ tsp. smoked paprika
  • ¼ tsp. ground black pepper
  • ½ tsp. salt
  • crushed red pepper, if desired
  • fresh parsley, for garnish

Instructions

  • In a large skillet over medium-high heat, add olive oil & butter.
  • Once butter is melted & bubbling, add potatoes. Spread them in a single layer & let them cook for about 15 minutes, until golden, crispy and fork tender.
  • Add onion, bell peppers & garlic to the skillet. Sauté for 5-7 minutes until the vegetables are softened and slightly caramelized.
  • Sprinkle smoked paprika, black pepper, salt & crushed red pepper, (if desired) over the vegetables. Stir well to combine and cook for an additional 2 minutes.
  • Remove from heat & garnish with parsley.

Notes

Add a little heat to your breakfast potatoes by adding crushed red pepper flakes.
Top with eggs for extra protein!
