Ingredients
5-6Tasteful Selections® 2-Bite potatoes, halved
3largeeggs
2tbsp.milk
⅓c.diced onions
⅓c.shredded cheddar cheese
Salt and pepper, to taste
Garnish
Bacon, cooked & crumbled
Shredded cheddar cheese
Chopped parsley
Instructions
Preheat oven to 350-degrees. Spray a mini muffin tin with non-stick cooking spray. Boil halved potatoes for five minutes. Once they finish boiling, dice into smaller pieces (you should have about ½ c. diced potatoes).
While potatoes are boiling, cook bacon in microwave or on the stove and break into crumbles.
Next, combine eggs and milk in a medium-size bowl. Mix in potatoes, onions, bacon, cheddar cheese, salt and pepper. Spoon into the muffin tins and bake for 20 minutes.
Garnish with bacon, cheddar cheese and chopped parsley, if desired. Enjoy!
