Re-purpose leftover air-fryer potatoes by making a simple breakfast hash! Heat oil in a skillet over medium heat. Sauté chopped red and green peppers and chopped yellow onion until tender, about 4 minutes. Add in leftover parmesan roasted potatoes and sauté until warm, about 3 minutes.
