32oz.Tasteful Selections® sweet potatoes
Kosher salt
Coarse ground black pepper
2oz.soy sauce
1tbsp.ketchup
½oz.apple cider vinegar
¼tsp.onion powder
2tbsp.butter
1bunch green onions
1green bell pepper
½c.roasted peanuts
Instructions
Preheat oven to 350-degrees. Roast sweet potatoes on a bed of kosher salt for 80 minutes.
While the sweet potatoes are roasting, mince green bell peppers and slice the green onions. Heat the soy sauce, ketchup, apple cider vinegar, garlic powder, onion powder and butter to a boil.
When the sweet potatoes are ready, brush off salt from the bottom and lay on a plate and gently smash. Pour the sauce mixture over potatoes and cover with peanuts, bell peppers, green onions and black pepper.
