Salt Roasted Sweet Potatoes

Ingredients

  • 32 oz. Tasteful Selections® sweet potatoes
  • Kosher salt
  • Coarse ground black pepper
  • 2 oz. soy sauce
  • 1 tbsp. ketchup
  • ½ oz. apple cider vinegar
  • ¼ tsp. onion powder
  • 2 tbsp. butter
  • 1 bunch green onions
  • 1 green bell pepper
  • ½ c. roasted peanuts

Instructions

  • Preheat oven to 350-degrees. Roast sweet potatoes on a bed of kosher salt for 80 minutes.
  • While the sweet potatoes are roasting, mince green bell peppers and slice the green onions. Heat the soy sauce, ketchup, apple cider vinegar, garlic powder, onion powder and butter to a boil.
  • When the sweet potatoes are ready, brush off salt from the bottom and lay on a plate and gently smash. Pour the sauce mixture over potatoes and cover with peanuts, bell peppers, green onions and black pepper.
