Buffalo Chicken Potato Bake

- 24 oz. Tasteful Selections® potatoes
- 2 c. shredded cheddar cheese, divided
- 1 c. shredded rotisserie chicken
- 2 tbsp. red pepper hot sauce
- ½ c. sour cream, plush more for garnish
- Salt and pepper, to taste
- 1 tbsp. chopped chives
Add potatoes to a 9-inch square microwave safe baking dish. Cover with plastic wrap and microwave on high until fork tender, about 8-10 minutes. Uncover and let cool for 10 minutes. Cut potatoes in half and return to baking dish.
Stir in 1 cup cheese, chicken, hot sauce and sour cream until combined. Season with salt and pepper. Top with remaining cheese. Microwave on high until cheese is melted, about 4-5 minutes. Garnish with a dollop of sour cream and chives.
Garnish with crispy chopped bacon for an added crunch.
