Buffalo Chicken Potato Bake

  • 24 oz. Tasteful Selections® potatoes
  • 2 c. shredded cheddar cheese, divided
  • 1 c. shredded rotisserie chicken
  • 2 tbsp. red pepper hot sauce
  • ½ c. sour cream, plush more for garnish
  • Salt and pepper, to taste
  • 1 tbsp. chopped chives


  • Add potatoes to a 9-inch square microwave safe baking dish. Cover with plastic wrap and microwave on high until fork tender, about 8-10 minutes. Uncover and let cool for 10 minutes. Cut potatoes in half lengthwise and return to baking dish.
  • Stir in 1 cup cheese, chicken, hot sauce and sour cream until combined. Season with salt and pepper. Top with remaining cheese. Microwave on high until cheese is melted, about 4-5 minutes. Garnish with a dollop of sour cream and chives. Serve.
