Instructions
In a medium saucepan, combine water, sugar, potatoes & mint. Cover & bring to a boil over high heat; Reduce heat to medium & simmer until potatoes are fork-tender, about 15 minutes. Remove & discard mint; Transfer syrup to blender & lend on high for 30 seconds or until uniform. Strain through a medium mesh sieve to remove bits of skin; Set syrup aside.
In a 32 oz vessel, combine all ingredients for Purple Passion™ Cooler (except mint garnish) & stir together until combined. If desired, you can strain mixture again through a fine mesh sieve to remove pulp & clarify liquid. Fill four 12 oz. glasses completely w/ ice & top w/ Purple Passion™ Cooler. Garnish with a fresh mint sprig & lime slice.

Simple syrup can be made ahead of time & stored in an airtight container for up to 7 days.
