Ingredients

Purple Passion™ Syrup

  • 8 oz. water
  • 4 oz. sugar
  • 4 oz. Purple Passion™ Potatoes, quartered
  • ½ oz. fresh mint (including stems)

Purple Passion™ Cooler

  • 1 c. coconut water
  • ½ c. pineapple juice
  • ¼ c. + 2 tbsp. Purple Passion™ syrup
  • 1 tbsp. ginger juice
  • ¼ c. + 2 tbsp. fresh squeezed lime juice *Must use fresh squeezed limes (not even 100% lime juice) for correct coloring.
  • 1 shot vodka, optional
  • Fresh mint sprig & lime slice, for garnish

Instructions

  • In a medium saucepan, combine water, sugar, potatoes & mint. Cover & bring to a boil over high heat; Reduce heat to medium & simmer until potatoes are fork-tender, about 15 minutes. Remove & discard mint; Transfer syrup to blender & lend on high for 30 seconds or until uniform. Strain through a medium mesh sieve to remove bits of skin; Set syrup aside.
  • In a 32 oz vessel, combine all ingredients for Purple Passion™ Cooler (except mint garnish) & stir together until combined. If desired, you can strain mixture again through a fine mesh sieve to remove pulp & clarify liquid. Fill four 12 oz. glasses completely w/ ice & top w/ Purple Passion™ Cooler. Garnish with a fresh mint sprig & lime slice.
