Roasted Potatoes with Homemade Cheese Sauce

Ingredients

  • 24 oz. Tasteful Selections® potatoes
  • 8 c. water
  • 3 tbsp. salt
  • 4 pieces bacon
  • 1 bunch scallions
  • 1 tbsp. smoked paprika
  • 1 tbsp. salt
  • 2 tbsp. all-purpose flour
  • 2 tbsp. butter
  • c. whole milk
  • 3 oz. American cheese
  • 2 oz. Monterey Jack cheese
  • 1 oz. Swiss cheese
  • 1 tsp. Worcestershire sauce
  • ½ tsp. salt
  • tsp. garlic powder
  • tsp. onion powder
  • tsp. nutmeg

Instructions

  • In a large stock pot, bring water, potatoes and salt to a boil. Reduce heat to a simmer and cook until fork tender. Drain potatoes and set aside.
  • In a Dutch oven over medium-low heat, combine butter and flour, stirring constantly for 5 minutes. Gradually add the milk, then the four cheeses, mixing until cheeses are melted and fully incorporated. Add the remaining ingredients and keep warm until ready to serve.
  • Cook bacon in a cast iron pan, then chop bacon. Reserve bacon fat.
  • Cook potatoes in pan with a little of the reserved bacon fat. Cook until roasted and crispy around the edges; season with salt.
  • To assemble dish, place potatoes on one side of a bowl.Garnish with bacon and smoked paprika powder. Pour homemade cheese whiz in bowl next to potatoes and garnish with scallions.
