Loaded Baked Potato Salad

Potato salad is one of summer’s must-have potato side dishes.  A good potato salad recipe deserve bragging rights, and this easy dish is no exception.

Ingredients

  • 24 oz. Tasteful Selections® potatoes
  • 1 c. sour cream
  • 1 c. shredded cheddar cheese
  • 7 pieces bacon, cooked and crumbled
  • 5 green onions, sliced
  • 2 tbsp. parsley, chopped
  • 2 tsp. dill, optional
  • Salt and pepper, to taste

Instructions

  • In a large pot, boil water on stove top. Make a cut all the way around the potatoes with a sharp knife. Place potatoes in boiling pot of water and boil for 20-30 minutes.
  • Drain potatoes and refill pot with cold water. Twist potato skin to remove and place in a large bowl. Slightly mash potatoes, leaving them chunky. Add sour cream, cheese, bacon, onions, parsley, dill and salt and pepper to bowl; mix well. Serve immediately or refrigerate.

Notes

Flavors will become enhanced the longer it is refrigerated.
Feel free to leave the skins on if you prefer.
