Loaded Chili Cheese Roasted Nibbles

Spice it up and give your traditional potato recipes a facelift. Combine hot chili and potatoes for an incredible taste!

Ingredients

  • 16 oz. Tasteful Selections Nibbles® potatoes
  • 1 tsp. vegetable oil
  • 1 tsp. chili powder
  • 1 tsp. Kosher salt
  • 1 can (15 oz.) chili
  • 2 oz. sharp cheddar cheese, shredded
  • 2 oz. Pepper jack cheese, shredded
  • ¼ c. sour cream
  • ¼ c. red onion, diced
  • 1 large jalapeño pepper, seeds and veins removed, diced

Instructions

  • Preheat oven to 450-degrees. Halve Nibbles and toss with vegetable oil. Arrange on baking sheet with cut sides down against the bottom of the sheet. Place in preheated oven and roast for about 15 minutes, or until the cut faces of the potatoes are golden brown.
  • While the Nibbles are roasting, heat up the chili on the stovetop or in microwave until hot.
  • When Nibbles are done, remove them from oven and season with chili powder and salt. Place/divide onto serving dish(es) and top with hot chili, cheese, sour cream, red onion and jalapeño pepper.
  • Serve immediately.

Notes

This dish can be customized in dozens of ways. Try adding bacon for a meatier version, serrano pepper for a flaming hot version or fried onions for an added crunch.
