- 2 tbsp. olive oil
- 2 cloves garlic, minced
- 1 tbsp. fresh parsley, finely chopped
- 1 tsp. fresh thyme, optional
- ½ tsp. kosher salt
- ¼ tsp. fresh ground pepper
Lime Dill Sauce- ½ c. sour cream
- 2 tbsp. mayonnaise
- 1 tbsp. fresh dill
- 1½ tsp. lemon zest
- 1 clove roasted garlic, minced
- salt & pepper, to taste

Instructions
Preheat oven to 400°F. In a large bowl, combine potatoes with olive oil, minced garlic, parsley, thyme, salt and pepper. Toss until evenly coated. Spread potatoes on baking sheet in a single layer. Roast 25–30 minutes, flipping halfway through, until potatoes are fork-tender. While potatoes cook, mix all ingredients for lemon dill sauce. Sprinkle potatoes with fresh parsley and serve warm with toothpicks and a dipping sauce.
