Impress your guests with these Maple Salmon Potato Kebabs
Today’s featured recipe combines Sunrise Medley® potatoes from Tasteful Selections®, a summer vegetable mix, and tasty salmon as your protein for an attractive main course cooked on a grill.
Ingredients:
- 16 oz. Tasteful Selections® potatoes (Sunrise Medley® is recommended)
- 1 tbsp. maple syrup
- 1 tsp. light soy sauce
- 2 tbsp. lemon juice
- 1 lb. salmon, cut into 1” cubes
- 1 medium zucchini, cut into 8 rounds
- 8 cherry tomatoes
- Lemon wedges, optional for serving
Instructions
Parboil your potatoes for about 10 minutes and preheat the grill to medium-low heat. In a large bowl, combine Oh Canada Dry Glaze, maple syrup, light soy sauce and lemon juice. Whisk together until combined, and then add salmon zucchini and potatoes. Toss gently to coat well, cover, and let marinate in the fridge for at least 15 minutes.
Thread the salmon and veggies onto skewers, and grill the kebabs with the lid closed until the salmon is firm, usually 6-8 minutes, while turning occasionally. Be careful not to touch the metal skewers with your fingers. Serve with lemon wedges if desired.
