Avoiding GMO technology removes most doubt about food safety

The safety of foods that are grown from GMO (genetically modified organism) seeds has been controversial for some time. While most research suggests GMO foods are safe, there is some disagreement in public opinion whether they may harm our health and the environment.  

We grow all of the potatoes (conventional and organic) in our Tasteful Selections® brands from natural, non-GMO seeds to alleviate any fears you might have about eating GMO foods. While most people are familiar with the GMO term, there is some confusion over what exactly the process entails.  

In short, GMO refers to any organism whose DNA has been modified using genetic engineering technology. This means the seeds have had genes added to them for various reasons such as pest resistance, greater yield, nutritional content, and even flavor.  

Organic production standards in the U.S prohibit the intentional use of genetically modified seeds, ingredients or inputs. As such, organic farmers must use non-GMO seed. 

Some of the most common concerns pertaining to consumption of GMO foods include potential allergy issues, associated herbicide use, and a negative impact on honeybees. Organizations including the Food and Drug Administration, Environmental Protection Agency, and USDA all maintain that GMOs are safe for human and animal consumption, with research ongoing.

Welcome warm weather with these delicious Campfire Potato Nachos

Spring and summer is a great time to break out the grill and add a taste of the outdoors to your cooking. Today’s featured recipe is a camping and backyard barbeque favorite that features Tasteful Selections® fingerling potatoes, contributed by Lisa Golden Schroeder, cookbook author, editor and blogger at Foodesigns

Ingredients:

  • 24 oz. Tasteful Selections® fingerling potatoes, quartered lengthwise 
  • 1 tbsp. olive oil 
  • 1 can (15 oz.) black beans, rinsed and drained, or chili beans 
  • 1 c. multi-colored cherry tomatoes, quartered 
  • ½ c. chopped white or red onion 
  • 1-2 small jalapeño peppers, thinly sliced 
  • 12 oz. (3 c.) shredded Mexican-blend cheese 
  • 1 large ripe avocado, pitted and chopped 
  • 1 small bunch fresh cilantro, torn 
  • Fresh lime wedges (if desired) 

Instructions 

Preheat the grill to medium-high heat. Tear off two sheets heavy-duty foil, 18 x 12 inches. Toss the Tasteful Selections® fingerling potatoes with oil and chili powder until well-coated. 

Spread half of the potatoes in the center of each piece of foil. Spoon half of the beans, tomatoes, onion, jalapeño peppers and cheese over the potatoes. Wrap each packet securely using double-fold seals, allowing room for heat expansion. 

Place the packets on the grill and cover. Cook about 30 minutes or until the potatoes are tender. Carefully open packets to allow steam to escape. Sprinkle with avocado and cilantro. Serve with fresh lime. 

Additional Tips

Par-cook the Tasteful Selections® fingerling potatoes until barely tender, then assemble the packets ahead of time (up to the night before). Pop them in the refrigerator. Pack them carefully in the cooler, placing them on top of other foods so they don’t get smashed. You can reduce the grill time by about 10 minutes. 

Swap in your favorite canned chili for the beans and use a little more cheese for truly gooey nacho-style potatoes. Instead of chopping up a fresh avocado, bring along some store-bought guacamole and a spicy salsa to spoon onto the nachos.
