Easy Potato Soup

Ingredients

  • 3 c. Tasteful Selections® potatoes, diced
  • ½ yellow onion, chopped
  • ½ tsp. minced garlic
  • 2 c. chicken broth
  • 2 c. milk
  • 3 tbsp. butter
  • ¼ c. flour
  • Salt and pepper, to taste

Optional toppings:

  • Shredded cheddar cheese
  • Bacon, cooked & crumbled
  • Chopped scallions

Instructions

  • Place potatoes & chicken broth in large Dutch oven or pot. Bring to boil & cook until fork tender, about 10 minutes.
  • While potatoes are cooking, melt butter in saucepan; add onions & sauté until translucent, then stir in garlic & sauté another minute or two. Whisk in flour, then add milk & cook over medium heat, stirring frequently until thickened. Add mixture to Dutch oven.
  • If you prefer your soup chunky, you're ready to add your toppings & serve; for a smoother consistency, use immersion blender or food processor for about 20-30 seconds.
  • Top with cheese, bacon & scallions.
