Balsamic & Herb Fingerling Potatoes

Ingredients

  • 32 oz. Tasteful Selections® fingerling potatoes, halved
  • 3 tbsp. whole grain mustard
  • 1 tsp. honey
  • 1 tsp. lemon juice
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. parsley, chopped
  • 1 tsp. thyme, chopped
  • ½ tsp. salt
  • tsp. black pepper
  • ¼ c. olive oil

Instructions

  • In a large pot, cover potatoes with water. Bring water to a boil and add salt to the water. Reduce to a simmer and cook until potatoes are fork tender, about 15-20 minutes. Drain potatoes and set aside.
  • In a large bowl, whisk together remaining ingredients. Add warm potatoes to the sauce and stir to combine. Serve warm or cool and refrigerate leftovers.
