Ingredients

Fingerlings

  • 24 oz. Tasteful Selections® fingerling potatoes
  • ¼ c. olive oil
  • 1 tsp. salt
  • ½ tsp. pepper

Beer Cheese Dip

  • 8 oz. shredded sharp cheddar
  • 4 oz. cream cheese
  • 4 oz. good beer
  • ¼ tsp. salt
  • 1 tsp. garlic powder
  • ½ tsp. crushed red pepper
  • ¼ tsp. liquid smoke
  • ½ tsp. pepper

Instructions

Fingerlings

  • Wash potatoes and cut in either halves or quarters lengthwise. Preheat oven to 425-degrees. Toss fingerlings with olive oil, salt and pepper. Roast or grill at 425-degrees for 25 minutes.

Beer Cheese Dip

  • Place cheddar cheese, cream cheese and beer in saucepan. Cook and stir over low heat until the cheese is melted and blended. Stir in salt, garlic powder, red pepper, liquid smoke and pepper. Cook and stir over low heat for 5 minutes, until mixture is completely smooth. Serve warm alongside cooked fingerlings.
