Sautéed Potatoes, Apples & Bacon

Ingredients

  • 6-8 slices thick-cut applewood smoked bacon, cut crosswise into ½-inch pieces
  • 24 oz. Tasteful Selections® 2-Bite or 3-Bite potatoes, halved
  • 2 medium sweet-tart red apples, cut into thick wedges
  • 2 tbsp. chopped fresh sage leaves
  • Grainy mustard, if desired
  • Sour cream, if desired

Instructions

  • Preheat a 12-inch cast-iron skillet over medium heat. Add the bacon; cook until crisp. Remove the bacon pieces and drain on paper towels; drain all but 2 tablespoons fat from the pan.
  • Add the potatoes to the skillet over medium-high heat; sauté 5 minutes. Carefully pour in 3 tablespoons water. Quickly cover the skillet; cook 10 minutes or until nearly tender.
  • Uncover pan; stir in apples. Cover and continue cooking 5 minutes, or until everything is tender. Sprinkle with bacon and sage. Serve with a bit of mustard and some sour cream.

Recipe Tips

Save some of the bacon fat for frying up some eggs to serve alongside the potatoes and apples.
For a leaner dish, swap in chopped Canadian bacon for the sliced bacon, using olive oil to sauté up the potatoes and apples.
