Ingredients

  • 2 tbsp. olive oil
  • 16 oz. Tasteful Selections potatoes, diced
  • 4 medium tomatoes, halved
  • ½ medium red onion (save a few thin slices for garnish) 
  • 1-2 garlic cloves
  • 1-2 jalapeños (slice a few for garnish)
  • ½ c. cilantro
  • 2 limes
  • 2 tbsp. chives 
  • Salt & pepper, to taste 
  • Cotija cheese

Instructions

  • Preheat the Griddle. Start by heating your Blackstone griddle. While it warms up, wash and clean your Tasteful Selections pre-washed potatoes to save time in the kitchen. 
  • Prepare the Potatoes. Dice the baby potatoes and place them on the griddle. Season with salt and pepper. To ensure they cook evenly, add a little water and cover them with a basting dome. This step allows the potatoes to steam and absorb all the flavor. 
  • Make the Sauce. While the potatoes are cooking, blend tomatoes, red onion, garlic, jalapeños, cilantro, salt, and pepper until smooth. Squeeze in the fresh lime juice and blend again. Taste the sauce and adjust seasoning with more salt, pepper, or lime as needed. 
  • Combine & Cook. Pour the salsa over the potatoes and stir, allowing them to soak up the sauce. Let it cook until the sauce thickens slightly, creating a rich, flavorful coating on the potatoes. 
  • Serve. Remove the potatoes from the griddle and top with fresh cilantro, red onions, chives, cotija cheese, and sliced jalapeños. For an extra touch, fry an egg to place on top and serve with warm tortillas.
