Slow Cooker Mashed Purple Potatoes
- 3 lbs. Tasteful Selections® potatoes, halved
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 2 c. milk, divided
- 4 tbsp. unsalted butter
- 1 c. sour cream
- 2 tbsp. fresh chives, chopped
Place halved bite-size potatoes in a large slow cooker. Sprinkle with garlic, salt and pepper. Pour 1 cup milk over potatoes. Cook on high 3-4 hours or low 6-7 hours, stirring occasionally, until tender.
Mash with potato masher until smooth. Stir in remaining 1 cup milk, butter, sour cream and chives. Season with salt and pepper, to taste.
