Ingredients

  • 24 oz. Tasteful Selections® potatoes, halved
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 sweet onion, chopped
  • 3 cloves garlic, pressed
  • ¼ c. fajita seasoning mix
  • ¼ fresh chopped cilantro, optional topping

Instructions

  • Preheat grill to medium-high heat. In a large bowl, toss together the potatoes, peppers, onions & garlic. In a small bowl, whisk together olive oil, lime juice and fajita seasoning. Pour seasoning mixture over potatoes and other veggies and toss to coat. Place two sheets heavy-duty aluminum foil on a flat surface and pour the potatoes into the center of the foil; fold sides up around potatoes and seal at the top by crimping the sides together to form a packet.
  • Place foil packet directly on the grill grate and grill until potatoes are fork-tender, about 25-30 minutes (check potatoes after the first 15 minutes and give them a quick toss to prevent the bottom from burning). Remove foil packet from grill with tongs and transfer to a flat surface before opening. Top with fresh chopped cilantro, if desired. Serve immediately.
