Ingredients
24oz.Tasteful Selections® fingerling potatoes
¼c.olive oil
2tbsp.taco seasoning
1c.shredded Monterey Jack or cheddar cheese
2scallions, thinly sliced
8slicesbacon, cooked and crumbled
Instructions
Wash potatoes and cut in either halves or quarters lengthwise. Preheat oven to 425-degrees.
Toss Party Potatoes with olive oil and taco seasoning. Arrange fingerlings in an ovenproof skillet and bake for 25 minutes.
Remove from oven and sprinkle with cheese, scallions and bacon; return to oven for 5 minutes, or until cheese is melted. Serve with sour cream, salsa and avocado, if desired.
