Chicken & Potato Skewers

Grilled chicken skewers with tender potatoes, bell pepper, onion, and mushrooms, seasoned to perfection. A quick and flavorful meal, perfect for grilling season!

Ingredients

  • 16 oz. Tasteful Selections® potatoes
  • 2 lbs. chicken breasts, cut into 1" pieces
  • 2 tbsp. olive or avocado oil, divided
  • seasonings of choice
  • 1 large red bell pepper, cut into 1" pieces
  • ½ red onion, cut into 1" pieces
  • 3 c. small button mushrooms (about 8 oz.)
  • Salt & pepper, to taste

Instructions

  • Boil water, then add potatoes & parboil until tender, about 10 minutes. Drain well Preheat grill to medium-high heat. Place chicken pieces in large bowl & toss with seasoning and 1 tablespoon oil. Add veggies to bowl & drizzle with remaining oil. Season with salt & pepper, if desired.
  • Thread chicken & veggies onto skewers. Grill skewers with lid closed, 2-4 minutes per side, until lightly charred & chicken is cooked through. Carefully remove from grill using oven mitts or tongs (DO NOT TOUCH METAL SKEWERS WITH YOUR FINGERS).
