- 2 tbsp. olive oil
- 1 tsp garlic powder
- ½ tsp. sea salt
- ¼ tsp. black pepper
- 1 tbsp. fresh chives, chopped
Chipotle Lime Sauce - 2 c. sour cream
- 1½ limes, juiced & zested
- 2 chipotle pepper in adobo, chopped
- 2 cloves garlic, minced
- 2 limes, juiced & zested
- 2 tbsp. cilantro
- 1 tsp. seasoning salt

Instructions
Preheat oven to 400°F. In a large bowl, combine potatoes with olive oil, garlic, salt and pepper. Toss until evenly coated. Spread potatoes on a baking sheet in a single layer. Roast for 25–30 minutes, flipping once halfway through, until potatoes are fork-tender. While potatoes cook, mix all ingredients for chipotle lime sauce. Sprinkle potatoes with fresh chives and serve warm with toothpicks and dipping sauce.
