Ingredients

  • 4 tbsp. unsalted butter, divided
  • 2 large yellow onions, thinly sliced
  • 48 oz. Tasteful Selections® Potatoes, sliced ¼-inch thick
  • 4 c. half & half
  • 3 cloves garlic, finely grated
  • 3 sprigs fresh thyme, plus chopped fresh thyme for farnish
  • 2 bay leaves
  • Salt and pepper, to taste
  • 8 oz. Gruyere cheese, shredded, divided

Instructions

  • Preheat oven to 350-degrees. In a medium skillet over medium-low heat, melt 2 tablespoons butter. Add onions and cook, stirring occasionally until golden-brown, about 8-10 minutes. Set aside to cool.
  • In a large pot over low heat, combine half & half, garlic, thyme and bay leaves. Add potatoes and bring to a simmer for 15 minutes, or until the potatoes are just tender. Season with salt and pepper. Carefully remove thyme and bay leaves and remove from heat.
  • Grease ramekins with cooking spray and fill each half way with potatoes and onions using a slotted spoon. Add half of the cheese and top each ramekin with remaining potatoes. Pour half & half mixture over potatoes and top with remaining onions and cheese. Bake, uncovered for 15-20 minutes or until the cheese is bubbly and golden-brown. Top with thyme. Rest for about 10 minutes before serving.

Recipe Tips

Make in a 9x13-inch baking dish! Simply layer ingredients according to step 3 and bake for 30-45 minutes until cheese is bubbly and golden-brown.
Use leftover cooked potatoes in this recipe by slicing thinly and adding directly to prepared ramekin dishes.
