4clovesgarlic, peeled
1tbsp.olive oil
Salt and pepper, to taste
Dressing
2tsp.fresh lemon juice
2tsp. Dijon mustard
⅔c.mayonnaise
Salt and pepper, to taste
Garnish
8slicesbacon, cooked and crumbled
2-3 green onion tops, thinly sliced
2tsp.fresh parsley, chopped (optional)
Instructions
Preheat oven to 400-degrees. In a large bowl, combine Nibbles®, garlic, olive oil, salt and pepper. Gently stir to coat. Pour onto baking sheet and roast for 20 minutes, turning over after 10 minutes.
Make dressing by whisking together fresh lemon juice, Dijon mustard, mayonnaise and salt and pepper, to taste; set aside.
When potatoes are cooked to desired tenderness, remove from oven and allow to slightly cool. While potatoes are still warm (not hot), add the dressing, cooked bacon, green onions and parsley; carefully stir to combine. Serve warm or at room temperature.
