Fiery Moroccan Chicken with Creamy Garlic Parsley Potatoes

Ingredients

  • 1 pkg. Potatoes Your Way® Garlic Parsley
  • 1 whole chicken
  • 3 tbsp. Harissa
  • 2 tsp. smoked paprika
  • 2 tsp. ground cumin
  • 1 tsp. ground coriander
  • 2 tsp. kosher salt
  • 1 tsp. ground pepper
  • 1 orange
  • c. chicken stock

Instructions

  • Preheat oven to 350°F. Pat chicken down with paper towels to dry it.
  • In a medium-sized bowl, mix together the harissa, paprika, cumin, coriander, salt and pepper. Rub mixture generously over chicken. Cut the ends off of both sides of the orange. With a sharp pairing knife, slice down the side of the orange, trying to get as much of the orange zest as possible and get as little of the white pith. Continue around the orange until you've removed all the orange zest. Squeeze the orange flesh to get the juice(you should get ⅓-½ cup) and add it and the chicken stock.
  • Add chicken stock & orange mixture to pan and place in oven and roast for 1 hour or until the internal temperature reaches 165°F. Let chicken rest for 10 minutes before carving and serving.

Microwave Mashed Potatoes Your Way™ Garlic Parsley

  • Leave potatoes whole and do not remove film.
  • Place tray in microwave & cook 6 min., let stand 1 min.
  • Carefully remove film & mash with fork. Add 2 tbsp. butter, ¼ cup hot milk & seasoning mix.
