Roasted Fingerling Potatoes with Fresh Chive Dressing

Ingredients

  • 32 oz. Tasteful Selections® potatoes
  • 2 tbsp. extra virgin olive oil
  • 1 tsp. coarse sea salt
  • ½ tsp. freshly ground pepper
  • ½ c. plain Greek yogurt (2% fat)
  • ½ c. light sour cream
  • 1 tbsp. fresh chives, finely chopped
  • ½ tsp. garlic salt

Instructions

  • Preheat oven to 400-degrees. Cut potatoes into 1-inch pieces. Toss potatoes with olive oil and season with salt and pepper. Spread potatoes onto an oiled sheet pan and roast for 40-45 minutes, or until potatoes are golden and fork tender.
  • Whisk together yogurt, sour cream, chives and garlic salt. Serve with warm potatoes.
