Holly Jolly Potato Soup

  • 3 c. diced Tasteful Selections® (Recipe favorites: Honey Gold))
  • 2 stalks celery, chopped
  • 1 medium onion, grated
  • 2 tsp chicken bouillon
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 c. water
  • ¼ c. butter
  • ¼ c. flour
  • 2 c. milk (2% or whole)
  • Green onions, chopped (optional garnish)
  • Bacon, cooked and crumbled (optional garnish)


Cook potatoes, celery, onion, bouillon, pepper, salt and water in medium-sized saucepan over medium heat until tender. In separate skillet, melt the butter. Add in flour gradually and stir over medium heat until bubbly. Add the milk and stir over medium heat until thickened. Add to soup and stir thoroughly. Add green onions and bacon for garnish, if desired.
