Salami and Roasted Potato Skewers

Hosting an outdoor shindig? These bite-sized skewers are the perfect appetizer, combining creamy flavor and protein.

- 16 oz. Tasteful Selections® potatoes (Recipe favorite: Honey Gold)
- 2 tbsp. olive oil
- ¼ c. cream cheese, softened
- 1 tbsp. parsley, chopped
- 1 tsp crushed red pepper
- 8 oz. salami, sliced
Preheat oven to 450-degress and line baking sheet with foil. Place potatoes on baking sheet and drizzle with olive oil. Bake for 12-15 minutes, turn potatoes, then bake an additional 12-15 minutes, or until potatoes are tender. Allow to cool to the touch.
In a small bowl, stir together the cream cheese, parsley and red pepper. Spread ½ teaspoon cream cheese onto a slice of salami. Place one potato in the center of salami and wrap the meat around the potato. Secure with a toothpick. Repeat with remaining potatoes and salami slices. Refrigerate any leftovers.
